Enchilada’s con Mayra

Today en la clase de Espanol, we cooked again.  In their examples, my kids keep throwing my cooking under the bus.  I really think my teacher doesn’t think I know how to cook and that my kids are malnourished.  That said, I do have a lot to learn around la cocina, and am grateful for her expertise in learning a few local favorites.  Today we made enchilada’s.  They were different than what we call an enchilada in Colorado.  It reminded me more of an empanada.  Either way, it was delicious! We each only got one….I could have easily eaten another!  Guess I’ll have to try them out again on my own!
